


This quick but comforting treat is one of Tino’s favourite weekday meals. Easy to make, with the nutritious benefits of handfuls of fresh spinach, it is the perfect way to celebrate our delicious Zandam Ricotta.
Keep your dumplings small and enjoy them with a glass of your favourite wine. If you add a classic Caprese salad with our Zandam Fior di Latte or Mozzarella di Bufala, you’ll have a delicious, authentically Italian meal, pronto!
INGREDIENTS/THE WHAT:
400g Zandam Ricotta
400g Baby Spinach
100g Zandam Local Parmesan
200g Plain Flour
2 Eggs
Pinch of Nutmeg (Did you know that spinach loves nutmeg?)
METHOD/THE HOW:
- Wilt your spinach lightly and then blend it into a pulp with a stick blender.
- Add the flour, egg and Zandam Ricotta to the spinach and shape it into a dough, then form little dumplings in the same way you would when you make gnocchi.
- Cook the dumplings by quickly boiling them in salted water. The moment they float to the top, they are done. (This doesn’t take long at all.)
4. You can serve them with any sauce. We love them fried up in a bit of butter and sage, drizzled with olive oil and served with Mozzarella di Bufala, or even drenched in Nonno Matteo’s favourite Napolitana sauce.
